Continued from last time
This is a story about Umezu Sake Brewery.
Three years ago, I was incredibly excited to attend a sake tasting event at a senior colleague's restaurant (Sakaho-te), where President Umezu was invited.
Of course, the sake served with the dishes from start to finish is Mr. Umezu's.I was secretly worried that I might get tired of drinking, but surprisingly, the sake (warmed with added water) and the food from Mr. Sakahoshi went down smoothly.
I felt it was very similar to the sensation of drinking tea or miso soup.
That was the moment my impression of Tomirei completely changed.
I was looking forward to meeting President Umezu (6th generation), who makes such unique sake, and it turns out he's almost the same age as me (… a little younger).)
He sat next to us and bombarded us with questions, and he answered us in a polite and very warm manner. He's just so serious and kind...
I've grown to like Mr. Umezu's sake even more.(Hmm, this is starting to sound like a declaration of love.)
And so, ever since, it has become a staple of Miyamoto Delicatessen's warm sake selection, and I recommend it to all kinds of people in all kinds of situations without overthinking it.
It's a really interesting sake; warming it up is quite fun, and sometimes it can be a challenge.

Speaking of which,
How was your training in Tottori?
I've been getting so many requests from people
I'd like to give you a brief update here as well.
Lately, I've been looking back and still lazily writing reports, using the excuse of practicing how to warm sake.
We're drinking and eating while chatting about this and that.
This trip didn't include many planned activities or sightseeing.
I stayed at Umezu Brewery for three days to brew sake.
@umetsu_sake
My purpose was to help with the process of preparing the sake mash using the kimoto method.
Before we get into that story...
Since we're on the subject, let me tell you how I met Ms. Umezu.
"Furei"
This sake is made by Mr. Umezu and is well-known among those who enjoy warm sake.
I believe we met about five or six years ago, right in the middle of the COVID-19 pandemic.I was shocked the first time I drank it.
It has a fragrant aroma of caramel and nuts, and a tangy scent reminiscent of Shaoxing wine. The taste is complex and difficult to describe in words, with a deep umami and rich acidity that gradually builds up, making it an interesting drink that makes you want to eat something after drinking it.
It's a unique drink, so it seems like it would pair well with spicy, Chinese, or sweet and savory dishes, but it's also the kind of drink that seems to require careful consideration of the food and the customers it's served with—it's tricky... that was my first impression.
At that time, it was a special drink for me, and I had quite a bit of trouble deciding when to serve it.

Notice about cherry blossom viewing bento boxes 🌸
I was thinking how cold it was, but before I knew it, spring had arrived.
The cherry blossoms in Takamatsu are expected to start blooming around March 25th, with full bloom between April 2nd and April 7th.
Taking advantage of the arrival of spring,
Miyamoto Delicatessen will also be offering a limited-time cherry blossom viewing bento box.
In addition to the classic smoked duck...
Local spring ingredients that are available at the time, such as asparagus and burdock leaves.
This box will include homemade chicken meatballs and inari sushi, which was very popular last year.
For this inari sushi, we'll be using the fried tofu from Kubo-san in Utazu, which the shop owner loves.
*During filming, I didn't have time to prepare the fried tofu, so I used some from a nearby supermarket. The inari sushi will be a bit juicier and plumper in the future 😂 The contents of the dishes may also change slightly depending on what's available in season.
Reservations tend to be very busy during cherry blossom season, so we recommend booking early. 🙇♀️
